Role Summary: The Business Owner Mindset
As the Patrão, you are entirely accountable for the financial success, risk mitigation, and cultural health of your casa (home/restaurant). You will actively mentor a tiered management structure (including Assistant and Junior Managers) while analyzing income statements, tracking cold-chain audits, and embedding yourself into the local Stellenbosch community to drive B2B revenue.
Key Performance Areas
1. Financial Management & Data Analysis
- Income Statement Ownership: Analyze monthly Profit & Loss (P&L) statements, manage income conversion rates, and strictly control variable store expenditure.
- Budgeting & Targets: Provide strategic input into the restaurant’s annual budget and set realistic, daily performance targets for your floor teams.
- Audit & Discrepancies: Directly investigate and resolve weekly cash shortage reports flagged by corporate finance. Review and sign off on third-party food delivery invoices (UberEats, Mr D Food) weekly.
- Gross Profit (GP) Controls: Conduct accurate weekly and period-close raw inventory counts to calculate true food and beverage GP margins.
2. Advanced Operational Compliance & Risk
- Audit Defense: Work hand-in-hand with your Assistant Manager to clear independent, highly rigorous corporate evaluations, specifically Qpro (food safety/hygiene audits) and Escudo (operational compliance/brand standards).
- Asset Protection: Collaborate with the corporate Loss Prevention Officer to implement anti-fraud measures and security controls.
- Maintenance & CapEx: Partner with the Regional Facilities Manager to oversee planned equipment maintenance and minor capital expenditure upgrades.
3. Human Resources & IR Practices
- Mentorship Architecture: Conduct structured one-on-one sessions, execute formal performance reviews for junior managers, and design clear personal development plans.
- Industrial Relations (IR): Initiate progressive discipline loops, compile case evidence, and chair localized disciplinary hearings. Manage the casa to withstand surprise Department of Labour inspections.
- Payroll Control: Submit and monitor shift configurations, hourly wages, and payroll information in line with national Nando’s policies.
4. Localized Marketing & CSI
- B2B Sales Growth: Build strong relationships within the Stellenbosch community to secure large-scale catering accounts (University residences, wine farms, schools, and government offices).
- Corporate Social Investment (CSI): Plan and execute quarterly community-driven initiatives to align the brand with local social growth.
Minimum Requirements
- Education: Grade 12 / Matric certificate.
- Experience: 3 to 5 years of proven restaurant management experience within a high-volume, structured corporate food brand or casual dining environment.
- Logistics: Valid Driver’s License (essential for regional management sessions and local marketing supply chains).
- Technical Skills: Full proficiency in MS Office (specifically intermediate Excel for processing GP and income sheets).
- Core Competencies: Elite financial acumen, written and verbal communication skills, and a transparent coaching-led leadership style.
