The Role: Craftsmanship in Retail
As a Blockman for Delthorn, you aren’t just a meat cutter; you are a specialist responsible for the quality and profitability of the butchery department. You manage the “yield”—ensuring that carcasses are broken down efficiently to provide the best cuts for customers while minimizing waste.
Key Responsibilities
- Carcass Breakdown: Expertly cut and prepare beef forequarters, hindquarters, and lamb carcasses.
- Precision Cutting: Cut, bone, or grind meat according to specific customer orders or retail display standards.
- Food Safety & Hygiene: Maintain strict health and sanitation standards by cleaning equipment and storing meat at precise temperatures in refrigerators or freezers.
- Equipment Mastery: Sharpen and adjust specialized cutting equipment and ensure machinery is operated safely.
- Inventory Control: Receive and inspect meat deliveries for quality, keep inventory of sales, and assist in ordering new supplies.
- Merchandising: Weigh, wrap, and create attractive displays of meat cuts to drive store sales.
Minimum Requirements
- Education: Grade 12 or an equivalent qualification.
- Experience: A minimum of 4 to 6 years of experience in a Retail Butchery environment is essential.
- Technical Skills: Must be fully competent in operating butchery machinery.
- Qualification: A butchery-related qualification is required.
- Expertise: Proven experience in the processing of beef and lamb carcasses.
