Thavhani Mall is the premier retail hub of Thohoyandou, meaning this specific Pedros store experiences massive foot traffic, especially during end-of-month rushes, weekends, and holidays. As the Griller, you will operate under high temperature and high pressure. Your role is a fine balance of culinary timing and strict assembly-line consistency—ensuring that every single chicken is perfectly cooked, juicy, and basted exactly to order without slowing down service timers.
Key Responsibilities
1. Core Food Preparation & Flame Grilling
- Recipe Execution: Prep, season, flame-grill, and baste chicken lines (and other menu items) precisely according to approved Pedros corporate recipes and flavor profiles (Mild, Hot, Extra Hot, etc.).
- Quality & Portion Control: Actively monitor grilling temperatures, flame heights, and cooking timers to ensure product consistency. Stick to rigid portion-control guidelines to avoid shrinking profit margins.
- Presentation: Ensure the final product looks appetizing, is cut correctly, and meets the brand’s visual standards before handing it over to the packaging and front-counter teams.
2. Stock Flow & Waste Mitigation
- FIFO Discipline: Manage the kitchen’s back-up inventory using strict First-In, First-Out (FIFO) stock rotation principles to ensure fresh chicken is used first and spoilage is eliminated.
- Prep Support: Assist with the daily morning preparation of raw ingredients, basting sauces, and side items to ensure the kitchen is fully loaded before the doors open.
- Yield Optimization: Tightly monitor production levels against real-time customer flow to keep waste metrics to an absolute minimum.
3. Hygiene, Food Safety & Maintenance
- Sanitation Routine: Maintain an immaculate workstation. Clean and scrub grills, vents, prep tables, and utensils regularly throughout the shift.
- Compliance Checks: Adhere to South African food safety standards and corporate health policies. Conduct daily equipment checks on the gas/electric grills and report any technical faults or temperature calibration issues to the manager immediately.
Job Requirements
- Experience: Previous experience (+1 year) operating commercial grills or working inside a fast-paced quick-service restaurant (QSR) kitchen is highly preferred.
- Knowledge: Sound practical understanding of foundational food safety regulations, cross-contamination prevention, and personal hygiene practices.
- Flexibility: Complete willingness to work long retail hours, rotational shift patterns, weekends, and public holidays.
- Physical Stamina: The ability to work efficiently while standing for extended periods in a high-temperature kitchen environment.
